DESCRIPTION:
Produced with high-quality Glera grapes from Valdobbiadene, the heart Prosecco’s original homeland, which produces excellent grapes, this semi-sparkling wine featuring the typical cork tied on with a string fully expresses the long winemaking tradition and culture in the area that Prosecco originates from.

PRODUCTION METHOD:
Valdobbiadene Prosecco DOCG “Spago” interprets the centuries-old local tradition of tying on the cork with string in a contemporary key. This ancient technique once used by winemakers to prevent the corks being forced out of bottles of semi-sparkling Prosecco during the natural fermentation process, was offered to the market once again by Mionetto in 1961. Still today the corks are tied on manually by specialist workers.
VINIFICATION:
In order to obtain elegant, pin-point bubbles, the must is meticulously fermented, then the wine receives a secondary fermentation in pressure fermenters, until it is lightly sparkling, at around 2.5 atmospheres of pressure.
ALCOHOL CONTENT:
11% vol
TOTAL ACIDITY:
5.5 - 6.5 g/l.
SUGAR CONTENT:
10 - 14 g/l.
SERVING TEMPERATURE:
To fully appreciate its organoleptics subtleties, we recommend to serving it gradually chilled to a temperature 8°- 10° C.

FOOD MATCHES:
Its pronounced aromatics make this semi-sparkling wine a wonderful aperitif wine, with young or medium-aged cheeses and traditional local sausages. It is perfect paired with lighter fish dishes, such as rice with prawns, zucchini and tomatoes, or with lighter meats.
