A delicate straw yellow, with a very distinctive bouquet that marries together impressions of honey and wild apple. The palate, dry and pleasantly bitterish, is moderately full-bodied, yet attractively lean, thanks to a well-calibrated acidity. It releases a slender but dense bead of pin-point bubbles.

DESCRIPTION:
A cuvée that successfully introduces emotions and the special, unmistakable flavour of wine skilfully produced to enhance the characteristics of the native grape varieties of a unique area, at the foot of the Prealps of Veneto, where Mionetto has been based since 1887. These flavours and aromas have vanished over the years but now Mionetto reintroduces them in its Cuvée Sergio 1887, in line with excellent quality standards.
PRODUCTION AREA:
Growing areas in Veneto and Trentino exceptionally suited to sparkling wines.
GRAPES VARIETY:
Blend of white-wine grapes.
VINIFICATION:
A fermentation off the skins yields this Extra Dry-style cuvée, which then receives its secondary fermentation following the Charmat method.
ALCOHOL CONTENT:
11% vol
TOTAL ACIDITY:
5.5 - 6.5 g/l.
SUGAR CONTENT:
14 - 17 g/l.
SERVING TEMPERATURE:
The ideal serving temperature is from 6° to 8°C, which should be reached by gradual chilling.

FOOD MATCHES:
Moderate alcohol and fine balance give this smooth, crisp sparkling wine a versatility that makes it ideal for every occasion. It is the perfect pairing with light, simple fare in springtime dishes of fish or vegetables, such as fettuccine with tuna, or with mild fried peppers, or a barley, shrimp and asparagus salad. It makes a delicious aperitif wine, accompanying savoury pies or light finger foods, such as shrimp vol-au-vent.
