Apricot chicken breast
How to turn chicken breast into an original and inviting dish? With the apricot sauce that gives your dish the sweet and sour delicacy of seasonal fruit.
Ingredients for 2 persons
1 whole chicken breast
400 g apricots
2 garlic cloves
Extra virgin olive oil to taste
2 spring onions
Chilli pepper to taste
Chives to taste
Salt to taste
Preparation
In a large frying pan, brown a clove of crushed garlic for a couple of minutes in a little oil, then remove it and cook the chicken breast on a low flame for 15 minutes.
Finely chop the spring onion and stew it gently in a saucepan until completely softened (add a ladleful of hot water if necessary).
Clean the apricots, cut them into wedges and add them to your chicken breast: turn up the heat and sauté the chicken and fruit until they take on colour. Turn off the heat and keep warm.
Blend the spring onion with the chilli, EVO oil and a pinch of salt, then pour the sauce over the chicken breast and apricots and serve hot, accompanying your dish with a chilled glass of Prosecco Treviso DOC.
