Baked salmon with vegetables

INGREDIENTS (FOR 2 PEOPLE)

Salmon 2 steaks

Capers 10gr

Pitted black olives 30gr

Courgettes100gr

Red pepper 1

1 bunch dill

Extra virgin olive oil 15gr

Salt to taste

Black pepper to taste

RECIPE

Soak the capers in a bowl full of water for 5 minutes and in the meantime wash the vegetables and salmon under running fresh water. After the necessary time, drain the pitted black olives and capers.

Cut the courgettes and the pepper into cubes.

In a high-sided baking dish, spread an aluminum foil at least 30 cm long and a slightly shorter parchment paper on top of it. Place a steak of salmon and half of the vegetables on it, add a few leaves of dill, season with salt and pepper to taste. Finish with oil and then close the foil, first joining the edges of the parchment paper and then sealing the aluminum well.

Close the two side ends like candy and bake in a static oven at 150° for about 40 minutes (or in a ventilated oven at 130° for 30 minutes).
