Croquettes with Trevisan radicchio and morlacco del Grappa
This is the perfect season to savor one of the excellence of Veneto: the Trevisano radicchio! We suggest you to try this recipe paired with a glass of Sergio MO Collection.
INGREDIENTS (for 4 people)
2 heads of Trevisan radicchio
1 clove of garlic
1 yolk
1 tablespoon of parmesan
125 gr of ricotta
50 gr of breadcrumbs
150gr Morlacco del Grappa
salt to taste
pepper to taste
extra virgin olive oil to taste
RECIPE
Brown the garlic clove in a non-stick pan greased with oil. Add the radicchio previously washed and cut into strips. Once cooked, let it cool and then mix it in a bowl with the ricotta, parmesan, salt, pepper and egg yolk. If the mixture is too soft you can dry it with a spoon of breadcrumbs.
Then form the croquettes placing a piece of Morlacco del Grappa inside each and pass them in breadcrumbs.
Cook them in a non-stick pan with extra virgin olive oil.
