Pappardelle with porcini mushrooms

INGREDIENTS (for 4 people)

Pappardelle 500gr

Porcini mushrooms 500 g

Butter 50 g

Extra virgin olive oil 35 g

1 clove garlic

Parsley to taste

Salt to taste

Black pepper to taste

RECIPE

Clean the porcini mushrooms from the soil, using a small knife or a slightly damp cloth. Then cut them into slices and place them in a pan, where you have melted the butter over low heat together with the oil and garlic. Add salt and pepper and cook for about 10 minutes. Finely chop the parsley and set aside.

Bring the water to a boil and add salt. Cook the pappardelle for the time indicated on the package. Drain and dip them into the sauce, keeping the cooking water. Turn on the low heat and mix the ingredients. Add the chopped parsley and if needed, add a ladle of cooking water.
