Peas and roman broccoli soup

Soups are the ultimate autumn comfort food. Try this green version and combine it with Prosecco DOC TV MO Collection!

INGREDIENTS (for 4 people)

Spring peas 1 kg

Roman broccoli 1 of medium size

French onion 1

Granular vegetable broth 1 tbsp

Grana Padano to taste

Extra virgin olive oil to taste

Salt to taste

Pink pepper to taste

RECIPE

Finely slice the onion and brown it in hot oil. Then add the peas and the roman broccoli, add salt and pepper. Let it simmer for a few minutes, and then cover with water adding the spoon of granular vegetable broth that will give extra flavor. Continue cooking for about 15-20 minutes, then with the immersion mixer create a nice cream of the desired density. Serve your soup and sprinkle it with Grana Padano!
