Light zucchini puff pastry with goat cheese
INGREDIENTS (4 persons)
1 package
of rectangular puff pastry
6 fresh zucchini
Goat cheese 200 gr.
Grana
padano cheese 50 gr.
2
tablespoons pine nuts
1 sprig of
fresh mint
EVO oil
salt and pepper
Clean the zucchini and slice them thinly lengthwise with a mandoline, making strips that you will blanch in boiling salted water for a couple of minutes. Drain and dry the zucchini slices and let them cool.
In a baking
dish roll out the fresh puff pastry, and fill it by alternating strips of zucchini
on which you will have spread fresh goat cheese: proceed until you will have 3 or 4
layers, sprinkling each of them with Grana Padano
cheese.
Season with
salt and pepper and place in a static oven preheated to 180° for 25 to 30
minutes.
Meanwhile,
finely chop the pine nuts and the fresh mint.
Take your
quiche out of the oven, decorate it with the chopped herbs and serve warm or
cold, pairing it with a glass of Valdobbiadene Prosecco Superiore Docg
Brut.
