Pumkin Risotto
First autumn
flavors for the classic pumpkin risotto, to pair with a precious glass of
Prosecco Rosé Doc Luxury Collection.
INGRIDIENTS (for 4 people)
Carnaroli
rice 100 gr
Peeled
Delica squash 300 gr
Grana Padano cheese 50 gr
1 red Tropea onion
1 clove of
garlic
1 sprig of
rosemary
1 liter of
vegetable stock
1 glass of
Prosecco Rosé Doc
RECIPE
Thinly slice the onion and dice the squash: slowly stew the vegetables along with the garlic and rosemary for 15 minutes in a little extra virgin olive oil. Add the rice and toast it gently with a glass of Prosecco Rosé Doc Luxury Collection.
Keep cooking, adding the boiling broth little by little, for 15 to 18 minutes
(depending on the type of rice). Turn off the heat and add the Grana Padano:
stir gently and let it rest covered for a minute before serving with a
sprinkling of pepper.
