Pumpkin Gnocchi


Ingredients for 4 people

600 gr. cooked Delica-type pumpkin

300 gr of 00 flour

200 gr. boiled potatoes

1 egg

1 bunch of fresh sage

80 gr of smoked ricotta

50 gr of grated Grana Padano cheese

50 gr. butter

salt


Cook the pumpkin and potatoes in the microwave: just cut them into cubes, put them in a bowl with a couple of tablespoons of water and cook on high for 8 minutes, taking care to stir halfway through cooking.

Place the pumpkin and potatoes on a pastry board and work them with a fork to mix them well, then let them cool perfectly. Once cold, add the egg and knead well. Now you can start adding the flour a little at a time (the amount varies according to the consistency of thepumpkin and potatoes) working with your hands until the mixture is soft.

Cut the mixture into rolls as thick as a finger, with the help of a little flour, and cut them into chunks: cook them immediately in boiling salted water, draining them as soon as they rise to the surface. In a frying pan, heat the butter with the sage until it is bubbly: add the gnocchi little by little, stirring the pan and serve your gnocchi garnished with grated ricotta and parmesan cheese and accompanied by a glass of fresh cheese.
