Salmon and avocado cream tartare

INGREDIENTS (4 persons)

Fresh salmon suitable for raw consumption - 500 gr

2 ripe avocados

3 limes

1 sprig of mint

chives


RECIPE

To prepare the salmon tartare slice and chop the salmon with a knife, after carefully removing all the bones and any remaining flakes. Drizzle the tartare with half of the lime juice, a pinch of salt and a sprinkle of pepper.

Mince the chives, keeping the thicker stems aside, and the mint then add everything to the salmon, mixing carefully: no oil or added seasonings are needed for this dish.

Clean the avocado, dice it and season it with the remaining lime juice, then cream it with the help of a fork.

Prepare the small glasses: on the bottom put the lightly salted avocado cream, then the salmon tartare and decorate with a few chive stems.

Sprinkle with chopped pink pepper and serve cold, pairing the dish with a glass of Sergio Rosé.
