Salmon tartare

INGREDIENTS (for 2 people)

300 g of blast chilled salmon

Lemon juice to taste

1 tablespoon of vinegar

2 tablespoons of oil

Chives to taste

Salt to taste

Pepper to taste

RECIPE

Cut the salmon (previously cleaned and blast chilled) into very small cubes.

Mix them in a bowl with vinegar, lemon juice, chopped chives, two tablespoons of oil, salt and pepper. Let it season for a few minutes.

Divide the tartare into two parts and serve them on plates inside a pastry ring; press well, then remove the stencil. Decorate with chives and serve.
