Tuna croquettes

Light and inviting, to be enjoyed with a chilled glass of Prosecco DOCG Brut: here are delicious tuna croquettes to offer your guests for an aperitif or during a brunch.

Ingredients for 4 people:

200 gr. Natural tuna

60 gr. breadcrumbs

5 gr. Dijon mustard

Juice of ½ lemon

½ Tropea onion (chopped)

Parsley (chopped) to taste

1 egg

1 tablespoon EVO oil

1 clove of garlic

Salt and pepper to taste


PROCEDURE

Carefully drain the tuna using a fine-mesh colander, pressing gently with the back of a spoon to dry it thoroughly. Coarsely chop the tuna by adding the shredded breadcrumbs and, gradually, all the other ingredients: mustard, egg, chopped onion, lemon juice, parsley, a pinch of salt and a little squeezed garlic (the garlic should not cover the other flavors).

Work the mixture a little to create the tuna croquettes, shaping them into small hamburgers. Once formed, place the tuna croquettes in the refrigerator for an hour or two: this is to make them firm and allow them to cook without crumbling.

Grease a nonstick pan with a little olive oil and cook the tuna croquettes for about 15 minutes over medium heat, turning them until they are gently browned. Serve them warm paired with a glass of Prosecco DOCG Brut.
