Vegetarian omlette

During summer, you want delicious meals quick to prepare. We give you an idea: vegetarian omelette and a nice glass of Prosecco DOC TV MO Collection!

INGREDIENTS (for 2 people)

4 eggs

1 fresh spring onion

Datterini tomatoes to taste

1 knob of butter

EVO oil to taste

Salt to taste

Pepper to taste

Parmesan cheese to taste

RECIPE

Wash and cut the spring onion and cherry tomatoes into thin slices. Sauté them in a pan with a drizzle of oil and salt.

Break the eggs into a bowl, add salt, pepper and Parmesan cheese. Beat the mixture with a fork and melt a knob of butter in a pan. As soon as it has melted, pour half of the mixture and cook until a crust has formed on the bottom. Place part of the onion and cherry tomato mix on half of the surface, close at half moon and cook for a few more seconds. Repeat for the second omelet.
